Sparta Bavette Steak Salad

Ingredients

  • 1.7kg Sparta Angus Bavette steak
  • 2 tbsp olive oil
  • Coarse salt and pepper
  • 4 tbsp Dijon mustard
  • 6 cups lettuce, sliced
  • 1 punnet baby corn
  • 1 large avocado, sliced
  • 1 cup cucumber
  • 2 cups tomato, diced
  • 1/4 cup red onion, sliced
  • 1 cup fresh mozzarella, diced
  • Grana Padano cheese for garnishing

Vinaigrette

  • ¾ cup olive oil
  • 1 clove of garlic
  • 1 tsp Dijon mustard
  • 3 tbsp balsamic vinegar
  • 1 tbsp honey
  • Salt and pepper
  • 1 sprig of thyme

Preparation

  1. Add olive oil, salt and pepper to the Sparta Angus Bavette
  2. Coat the Sparta Angus Bavette with Dijon mustard
  3. Sear the Sparta Angus Bavette on a hot griddle pan
  4. Allow to rest
  5. Cut into strips
  6. Assemble lettuce, baby corn, sliced avocado, sliced cucumber, 2 cups tomato, sliced red onion, blocks of mozzarella in a salad bowl
  7. Toss steak on top
  8. For the vinaigrette: Mix together ¾ cup olive oil, 1 clove of garlic, 1 tsp Dijon mustard, 3 tbsp balsamic vinegar, 1 tbsp honey, salt and pepper and 1 sprig of thyme
  9. Add the vinaigrette to the salad
  10. Garnish with shaved Grana Padano cheese
